This easy 3-ingredient cake is light, creamy, and keto-friendly. Perfect for a quick, healthy treat with minimal effort!


Ingredients

  • 1 cup thick 4% cottage cheese

  • 2 large eggs

  • 1 cup keto-friendly milk chocolate chips (like Lily’s brand)


Instructions

  • Preheat the oven to 350°F (175°C).

  • In a blender, combine cottage cheese and eggs. Blend until smooth.

  • Melt the milk chocolate chips until smooth, then pour into the blender. Blend again to combine.

  • Pour batter into a solid one-piece cake pan (avoid springform pans unless fully lined with parchment paper).

  • Bake for about 30 minutes, or until edges are set and the center is slightly jiggly.

 

  • Cool at room temperature, then refrigerate for at least 2 hours before serving. Enjoy cold for the best texture!

Notes

This cake is best with thick cottage cheese for the creamiest texture. Milk chocolate chips provide natural sweetness, but you can adjust with a keto sweetener if you prefer a sweeter cake.
