Description

Soft, chewy, and perfectly sweet sugar cookies that stay fresh for days—made gluten-free without sacrificing flavor or texture.


Ingredients

Scale

1 1/4 cups gluten-free all-purpose flour (with xanthan gum)

1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1/2 cup coconut oil or vegan butter, softened

3/4 cup granulated sugar

1 large egg

1 tsp vanilla extract

1 tbsp milk (dairy or non-dairy)

Extra sugar for rolling


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.

3. In a separate large bowl, beat together the coconut oil and sugar until light and fluffy.

4. Add the egg, vanilla extract, and milk to the wet mixture and mix until combined.

5. Gradually stir the dry ingredients into the wet ingredients until a soft dough forms.

6. Scoop tablespoon-sized balls of dough and roll them in sugar.

7. Place dough balls on the prepared baking sheet, spacing them 2 inches apart.

8. Slightly flatten each ball with your fingers or the bottom of a glass.

9. Bake for 9–11 minutes, or until the edges are just turning golden.

10. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For best texture, do not overbake—the cookies will continue to set as they cool.

Store in an airtight container at room temperature for up to 1 week.

Add a few drops of almond or lemon extract for flavor variety.

Use a 1:1 gluten-free flour blend that includes xanthan gum for best results.
