Description
This fluffy cottage cheese cloud bread is a high-protein, low-carb alternative to traditional bread—perfect for keto and low-carb lifestyles. Light as air with a subtle tang and ideal for sandwiches or snacking.
Ingredients
3 large eggs, separated
1/3 cup cottage cheese (full-fat, small curd)
1/4 tsp cream of tartar
1/4 tsp salt
Optional: pinch of garlic powder or herbs for flavor
Instructions
1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
2. Separate the eggs carefully, placing whites in a clean, dry mixing bowl and yolks in a separate bowl.
3. To the yolks, add cottage cheese and salt (plus any optional seasonings), and blend until smooth using a food processor or immersion blender.
4. Beat the egg whites and cream of tartar with an electric mixer on high speed until stiff peaks form.
5. Gently fold the yolk mixture into the beaten egg whites using a spatula, being careful not to deflate the whites.
6. Scoop the batter into 6–8 even rounds on the prepared baking sheet.
7. Bake for 25–30 minutes, or until lightly golden and firm to the touch.
8. Let cool slightly before removing from parchment. Use immediately or store in an airtight container.
Notes
For best texture, serve cloud bread the day it’s made.
Store leftovers in the fridge and reheat in a toaster or oven for crisp edges.
